Sun-Dried Tomato Salsa Recipe

    Ingredients
    
                - 3/4 cup sun-dried tomatoes drained, and finely minced, 180 ml, in oil
- 2 anchovy fillets drained and finely minced, in olive oil
- 1/2 cup extra virgin olive oil 118 ml
- 1 tsp finely minced garlic 5 ml
- 2 Tbsp finely minced roasted shallot 30 ml
- 2-1/2 tsp finely minced fresh thyme leaves 12 ml
- 4 tsp finely minced fresh basil leaves 20 ml
- 1 Tbsp finely minced fresh Italian parsley 15 ml
- pinch Largeof cayenne powder
- 2 tsp Freshly ground black pepper 10 ml
- 1 tsp sherry vinegar 5 ml

                - Thoroughly combine all the ingredients together in a mixing bowl.
