Chinioti Mutton Machhli Recipe
The Chinioti Mutton Machhli is a regional mutton favorite from the Chiniot region in Punjab, Pakistan. The dish is made of tender lamb shanks (or shin) – the same portion that is often found in the Nalli Nihari.
The spices used to cook this dish are traditional gravy ingredients with hints of chili, mint and saffron. Yogurt is also added to give the curry a thick and rich consistency to make your salivary glands work overtime.

Ingredients
- 10 pcs lamb shank whole - 6 inches, mutton machhli
- 200 g Desi Ghee
- 2 tbsp Ginger chopped
- 1½ tsp garlic chopped
- 100 g Spring onions
- 4 tomatoes
- 3 green chillies chopped
- 1 tsp onion seeds
- 1 tsp black pepper
- ½ tbsp Turmeric powder
- 1 tsp Cumin seeds
- 1 tsp Mustard seeds
- 3 bay leaves
- 1 tbsp Red chilli crushed
- salt to taste
- 1 tsp dry ginger powder
- 1 tsp saffron heaped
- 1½ cup yogurt
- ¼ bunch coriander chopped
- 2 tbsp mint chopped

Instructions
- Wash the lamb shanks well.
- Heat desi ghee in a pan and sauté the ginger, garlic, spring onions, tomatoes and green chillies.
- Put mutton machhli and then add the spices except dry ginger, saffron and yogurt.
- Sauté for 10 minutes and then add water. Let it simmer for 25-30 minutes.
- Add the remaining ingredients and cook again for 10-15 minutes.
- Garnish with coriander and mint.
- Serve hot with naan.
