Apricot Chutney Recipe

One such scrumptious preparation is the apricot chutney.
It is a very simply recipe to whip up and can last days. The apricot chutney can be eaten in a number of ways. You can even adjust the spice level to suit your palate, or not use it at all. Follow the recipe below to make some finger licking good apricot chutney.

Ingredients
- 1 kg apricots pitted and quartered
- 500 g onion peeled and diced
- 2 cups raisins
- 500 g brown sugar
- 2 cups cider vinegar
- 1 tsp chili powder
- 2 tsp Mustard seeds
- 1 tsp ¼salt
- 1 tsp turmeric
- tsp ¾cinnamon

Instructions
- Mix together all the ingredients in a large saucepan and bring to a boil.
- Reduce heat and simmer for about an hour, uncovered, or until the chutney has thickened.
- Pour into warm sterilized jars and seal.
- Serve immediately or after a few days (tastes better).
