Spiced Rack Of Lamb With Balsamic Jus Recipe

Ingredients
For the lamb
- 3 lamb racks cleaned well
- salt and pepper to taste
- 2 tablespoon olive oil
For the sauce
- 1 tablespoon brown sugar
- 3 cups beef or lamb stock
- 3 tablespoon balsamic vinegar
For the spice mix
- tablespoon ¼turmeric
- 1 teaspoon chilli flakes
- 1 tablespoon ground coriander
- teaspoon ½ground cloves
- teaspoon ½ground fennel seeds
- 1 tablespoon ground cumin

Instructions
- In a bowl, combine all the ingredients for the spice mix.
- Salt and pepper the lamb racks and set aside.
- In a large skillet, heat olive oil on high.
- Sear the lamb rack on each side for 3 minutes.
- Remove and bring it to room temperature.
- Rub in about 2 tbsp of the spice mix on the lamb rack.
- This can be done a day in advance before baking.
- For the sauce, combine brown sugar ad vinegar and bring it to a boil.
- Add a little red wine and the remaining spice mixture.
- Boil and stir till the syrup thickens.
- Add stock and reduce it to about 1 ½ cups.
- Season the jus if necessary.
- In a 400 F pre-heated oven, roast the lamb racks for 25 minutes until medium rare.
- Remove from the oven and let it rest for about 5 minutes before carving.
- Drizzle the sauce on top of the lamb before serving.
