Jack Johnson Banana Pancakes Recipe
The monsoons are just about setting in and there’s nothing we’d like to do better than curl up at home with some great food and company, a sentiment Jack Johnson perfectly captures in his ‘Banana Pancakes’ song:
Sadly, the weekend is still a few days away. However, to channel the spirit of the song, you can whip up some banana pancakes at home and “pretend like it’s the weekend now.”
Banana Pancakes
Pancakes are flat, thin cakes made using flour combined with eggs, milk and butter. Around the world, pancakes have different avatars; in India we have cheelas, dosas, appams and neer dosas (which fit into the traditional ‘pancake definition’), in Japan there are oyaki pancakes, while in South Africa there are crepes.
We imagine that Jack Johnson was talking about the Western style of pancakes, made using flour, eggs and milk. Inspired by the song, we’ve shared a recipe for delicious banana pancakes which have bananas folded into the batter and are also topped with bananas.

- 1 cup all purpose flour
- 1 tbsp white sugar
- 2 tsp baking powder
- 1/4 tsp Salt
- 1 egg beaten/
- 1 cup Milk
- 2 tbsp vegetable oil
- 4 ripe bananas
Ingredients

- Sift the flour, white sugar, baking powder and salt together.
- Mash two of the bananas well.
- Whisk the milk, egg, vegetable oil and bananas together.
- Stir the flour mixture into this mixture until a batter forms.
- Heat a little oil in a frying pan and ladle 1/4 cup of the batter into the pan.
- Wait until the sides brown and flip the pancake until the other side browns.
- Repeat this process with the rest of the batter.
- Stack the pancakes on a plate.
- Chop the remaining bananas roughly and place over the pancakes.
- Top with a dash of honey and serve.
