This Pumpkin Pie Is Completely Clear And It Looks Amazing

It’s almost Thanksgiving and pumpkin (and pumpkin spice) are having their spot in the limelight. We thought we’d seen it all, from pumpkin spice pizza to cough drops, and were sure nothing could surprise us (anymore). However, we weren’t prepared for Alinea, a three Michelin star restaurant, to blow us out of the water with their miniature, clear pumpkin pie.

No joke, the pumpkin pie filling is completely clear, and we can’t stop looking at it. Posted by Chef de Cuisine Simon Davies on Sept. 24, the transparent filling (very clearly a product of wizard-worthy molecular gastronomy) combined with its itsy bitsy size, is mesmerising.

Here’s How It’s Done

According to the comments, Davies says it’s made from pumpkin distillate. This is made with a machine called a “rotovap” that creates a clear liquid with the flavor of whatever food you put into it. So while the pie looks clear, it tastes like pumpkin pie.

Davies mentions in the comments that “It is a distillation of pumpkin, cinnamon, ginger, and clove. Texture is very important to us. This melts away. If it were over-gelled it would not be worth serving. The main texture that brings on nostalgia is from the pate brisee.” Lots of technical sounding words boil down to the fact that it not only looks incredible but definitely tastes it too!
