A Dr.Seuss-Inspired Breakfast Bar Is Opening, And You Want To Know What’s On The Menu!

The imaginative mind of Dr.Seuss had a way of dreaming up vague sounding food that somehow always makes you want to try these delicacies. And now, just in time for Christmas, Fort Collins is getting a Dr.Seuss-inspired breakfast bar that offers its patrons a range of menu options inspired by Dr.Seuss’ creations.

The star of this menu will be, no guesses required, Green Eggs and Ham – the iconic dish ‘Sam I Am’ initially wanted no part of before succumbing to its deliciousness! “A little of bit of green food dye will do the trick,” said Chris Smith, a managing partner in charge of the kitchen. Other dishes for the restaurant will include a variety of Eggs Benedict dishes, peanut butter and jelly-stuffed pancakes, and a bar stacked with mimosas and bloody marys.

Sammy’s Breakfast Bar, the Dr.Seuss-inspired breakfast bar, will have walls decorated in artwork featuring characters created by the popular children’s author. For now, the restaurant will seat 90 and by next summer, the owners plan to add additional outdoor seating as well.

This Dr. Seuss-inspired breakfast and lunch spot is scheduled to open in late December at 4613 S. Mason St. in Midtown Fort Collins, Colorado.
