Prawn Fried Rice Recipe
Prawn fried rice is a popular Indian Chinese fusion dish which makes use of flavours from both the cuisines.
The recipe requires you to pre cook the prawns separately and then combine them with plain rice and an array of other vegetables in a hot wok. You could use the prawn recipe separately for a prawn starter dish and then use any leftover prawns for the rice.
Serve this rice with ketchup and some lime wedges as a main course.

Ingredients
- 4 cups white rice cooked and cooled
- 1/3 cup Spring onions finely chopped
- 1 cup mixed vegetables finely chopped
- 1 cup prawn stir fry
- 1 tsp Vinegar
- Pepper and salt as required
- 1 1/2 tbsp Sesame oil
To make the prawns
- 1/2 kg cleaned and de veined prawns
- 1 tsp garlic minced
- 1 tsp ginger minced
- 1/4 cup Spring onions finely chopped
- 2 green chillies finely chopped
- 1 tsp red chili paste
- 1 tsp light soy sauce
- 1/2 tsp Vinegar
- 1/2 tsp brown sugar
- 1 tbsp Tomato ketchup
- salt to taste
- 1 tbsp Sesame oil

To make the prawns
- Combine the tomato sauce, vinegar, soy sauce, brown sugar and red chili paste and mix well.
- Marinate the prawns in this mixture for half an hour.
- Head the sesame oil and sauté the ginger and garlic.
- Add the spring onions and green chillies and sauté for two minutes.
- Then, stir in the prawns as well as the sauce and allow them to cook without stirring for a minute.
- Flip the prawns and allow them to cook for another minute.
- Sauté the prawns for 3-4 minutes and add salt as required.
- Remove from the heat and allow them to cool.
To make the fried rice
- Stir fry the spring inions for a minute in the sesame oil.
- Stir in the rest of the vegetables and continue sautéing for 3-4 minutes.
- Add salt and pepper and the cooked prawns.
- Sauté the prawns for a minute and then add the rice.
- Continue sautéing the rice, turning the heat down to medium high.
- After two minutes, pour in the vinegar and sauté over high heat for 10-15 seconds.
- Take the rice of the stove and serve!
