Strawberry Orange Pancakes Recipe
Pancakes are a traditional breakfast dish and the perfect way to start off your day, if you have the time or the inclination to make them. It is both filling and nutritious, provided you add some fresh fruits, and what better way to kick-start your day (or a night out) than to indulge in a soft and fluffy variation of this sumptuous breakfast dish with Strawberry Orange Pancakes topped with some sweet maple syrup.

Ingredients
For the syrup
- 1 cup of strawberries
- 2/3 cup of orange juice
- 1/2 cup of sugar
- 3 tbsp of maple syrup
For the pancakes
- 2 cups of baking mix
- 2 tbsp of sugar
- 2 tsp of Baking powder
- 2 Large Eggs
- 1 large egg yolk
- 1 cup of evaporated milk
- 2 tbsp of orange juice
- 1 tsp of orange peel
- 1/2 cup of chopped strawberries

Instructions
- Add the strawberries, orange juice and sugar into a small saucepan and bring to a boil
- Reduce the heat and let it simmer uncovered for 5 minutes
- With a spoon remove 1/4 cup of strawberries and set aside
- Add the strawberry mixture into a blender and blend until it is smooth and set aside
- Mix the maple syrup with the reserved strawberries
- Combine the biscuit mix, sugar and baking powder in a large bowl
- In another bowl, add the eggs, egg yolk, milk, orange juice and the peel.
- Stir this mixture into the biscuit mix and blend
- Add the chopped strawberries into this mixture
For the pancakes
- Drop the batter onto a frying pan
- Drizzle some melted butter on the sides
- Turn the pancake when the bubbles form on top
- Cook until both sides are golden brown
- Remove from heat and drizzle some syrup on top and serve
