Aloo Beans Recipe
Indian vegetable dishes are about as varied as Indian spices. Meaning you wouldn’t have to repeat a dish if you had just the right number of veggies in your pantry. And god bless your palate if one of those vegetables is potato! Because then you just double the number of dishes you can make. One such desi veggie wonder is ‘aloo beans’.
Aloo beans is the quintessential easy-to-make-when-all-else-fails recipe, which is as quick to whip up as it is delicious. All you need is some spices and the two star players – potato and French beans (a.k.a. greens or simple beans). Follow this recipe to make some!

Ingredients
- 2 cups ½French Beans chopped
- 1 cup potatoes chopped
- 2 tbsp Oil
- tsp ¼Mustard Seeds
- tsp ½cumin seeds
- tsp ¼Turmeric Powder
- tsp ½cumin powder
- tsp ½garam masala powder
- 1 tsp coriander powder
- 1 tsp red chili powder
- salt to taste

Instructions
- Heat oil in a heavy bottomed pan or kadhai.
- Crackle the mustard seeds and then add cumin seeds. Let them sizzle.
- Now add the beans and potato along with the turmeric powder, cumin powder, coriander powder, and red chili powder. Mix well.
- Cover and cook, while stirring occasionally, till the vegetables are soft. About 10-15 minutes.
- Once cooked, add the garam masala powder and give one final stir.
- Serve hot with roti or paratha.
