Summer (and humidity) is in the air so a tall glass of some chilled fruity mocktail isn’t exactly the worst thing. Especially, is it’s being shaken up by Yauatcha’s Chef Wang Yixuan! The fruit drink, christened the Tokyo Cooler, comes bearing a number of summer fruits like peach, guava, and raspberries with an added kick of lemongrass and elderflower syrup sweetened with a dash of gomme syrup. The final result is a fiery crimson potion that spells out summer! Follow the recipe below to shake up some of Chef Yixuan’s awesomeness at home!

  1. Take all the ingredients in a cocktail shaker.
  2. Muddle, shake, and pour the mix into a bamboo glass over fresh ice.
  3. Garnish with a banana leaf and serve.
