Aloo Tikki Frankie Recipe

Frankies are Indian wraps that are famous on the streets of Mumbai, Maharashtra (as the Mumbai Burrito). The aloo tikki frankie is exactly what it sounds like. A tangy blend of Indian and spices and potato wrapped up in a roti or paratha – similar to a burrito.

The roll is easy to make and super sumptuous. It could be your evening snack, your kid’s tiffin or even a full meal in itself! Follow this recipe and learn how to roll up a perfect aloo tikki frankie.

Instructions
For the stuffing
  1. Heat the butter in a broad non-stick pan, add the ginger-garlic paste and sauté on a medium flame for 30 seconds.
  2. Add the potatoes, chili powder, garam masala, chaat masala, coriander and salt, mix well and cook for 1 to 2 minutes. Keep aside.
  3. Mix the chilies and vinegar well in a bowl.
  4. Blend together the onion masala ingredients to form a mixture.
  5. Stir in the spices and water to make the masala water.
Making the frankies
  1. Place a roti on a clean dry surface and spread ¼th of the potato stuffing in a single row in the center of the roti.
  2. Drizzle a quarter of the masala water and 1 teaspoon of chilies in the vinegar evenly over it.
  3. Sprinkle a quarter of the onion masala mixture on it and roll it up tightly.
  4. Repeat with the remaining ingredients to make 3 more frankies.
  5. Wrap a tissue paper around each frankie and serve immediately.
