Baked Eggs In Tomato Sauce Recipe

Ingredients
- 600 grams of tomato
- 2 cloves of garlic
- 2 tbsp of extra virgin olive oil
- Salt and ground pepper
- 1 tsp of chopped oregano or oregano powder
- 8 Large Eggs
- 2 tbsp of cheese

Instructions
- Preheat the oven to 200 degrees C
- In a bowl, add the tomatoes, garlic and oil and mix well
- Season the marinated tomatoes with salt and pepper
- Place the tomatoes cut side up and roast for 15 minutes in a pan
- Remove from heat and add it to blender.
- Puree it until it becomes semi solid mixture
- Add the oregano to this mixture
- Place oven-proof bowls on top of a baking sheet
- Strain through the tomato puree into the bowls
- Crack open the eggs and add them into the bowl with some salt and pepper
- Add the cheese on top of the eggs
- Bake for 15 minutes
- Remove from the oven and serve hot
