Bridget Jones’s Diary Potato Leek Soup Recipe

    Ingredients
    
                - 1 pound leeks cleaned and chopped
 - 3 tbsp unsalted butter
 - 1 pinch kosher salt
 - 14 ounces Yukon Gold potatoes peeled and diced
 - 1 quart vegetable broth
 - 1 cup heavy cream
 - 1 cup Buttermilk
 - 1/2 tsp white pepper
 - 1 tbsp sniped chives

    Instructions
    
                - Melt the butter and sauté the leeks and salt for five minutes.
 - Decrease the heat and cook for 25 minutes.
 - Stir in the potatoes and vegetable broth and increase the heat until it boils.
 - Reduce the heat and simmer for 45 minutes.
 - Turn off the heat and puree the mixture until smooth.
 - Add the cream, buttermilk and white pepper.
 - Sprinkle with the chives and serve.
