Chef Mojo-Marinated Pork Shoulder

- 3/4 cup extra virgin olive oil
- 1 cup chopped cilantro
- 1 tbsp grated orange zest
- 3/4 cup orange juice
- 1/2 cup lime juice
- 1/4 cup chopped mint leaves
- 8 cloves minced garlic
- 1 tbsp minced oregano
- 2 tsp ground cumin
- kosher salt to taste
- grounded pepper to taste
- 3 1/2 pound boneless pork shoulder

Instructions
- Whisk all the ingredients leaving out the seasoning and the pork.
- Add 1 teaspoon of salt and pepper each.
- Shift the marinade to a ziplock bag and put the pork in it as well.
- Close the bag and move it around so that the pork in well-coated in the marinade.
- Refrigerate it overnight.
- Preheat the oven to 425° and put in a rack on a rimmed baking sheet.
- Take out the pork on the kitchen platform and throw away the excess marinade.
- Fold the pork inwards and tie it with a string to make a roll.
- Season the pork with salt and pepper.
- Put the pork on the rack and roast it for about half an hour.
- Once the pork is light brown, reduce the oven temperature to 375° and keep on roasting for another one and a half hours.
- Check the temperature in the center of the pork and once its 160° leave to rest for half an hour.
- Remove the string and slice the pork before serving.
