Dhoowan Gosht Recipe
Dhoowan gosht (smoked lamb) is a lamb preparation from Pakistan. The dish comprises cubes of lamb mixed and along and cooked with yogurt, tomato, onion and spices.
The dhoowan (smoke) comes in from the burning charcoal that is placed inside the pot in which the lamb was cooking. This happens when the dish is fully prepared. Here’s how you can cook up a delicious dhoowan gosht for yourself at home.

Ingredients
- 1 1/2 kg mutton (from leg 1 inch boneless cube)
- 50 gm red chilli
- 30 gm turmeric
- 50 gm whole garam masala jeera, ajwain, star anise, javitri, cloves, bay leaf, black and green cardamom, coriander, fennel seed
- 200 gm tomato
- 350 ml yoghurt
- 2 capsicum green
- 20 kg gm + 1atta whole grain flour
- 100 gm butter white or salted
- 100 gm ghee
- 3 eggs
- 2 Tbsp salt
- 3 cucumbers
- 1 mango ripe
- 2 Tbsp ginger paste
- 2 Tbsp garlic paste
- 3 onions
- 50 gm cooking soda

Instructions
- Put the mutton cubes in a pan.
- Add chopped tomato, onion, ginger, garlic, yoghurt, and chili and whole. Cook on the stove.
- When meat is nearly done, put ghee and butter and cook on high high flame till done.
- Take a charcoal in a stainless steel plate and pour some water over the burning charcoal. Once the smoke starts rising, lay the plate in the cooked meat pan and seal for 5 minutes.
- Serve.
