Ingredients
- 175 grams golden caster sugar
- 280 grams icing sugar
- 450 grams ground almonds
- Seeds from 1 vanilla pod
- 2 eggs beaten
- 1/2 tsp orange juice
- 3 tbsp apricot jam

Instructions
- Combine the sugar, almonds and vanilla seeds together.
- Cut in the eggs and orange juice.
- Knead into a smooth dough over a floured surface.
- Shape into a ball and cool.
- Dust a surface with icing sugar and roll the marzipan into a 40 cm circle.
- Flip and cover with icing sugar two or three times.
- Serve the marzipan atop a cake or refrigerate.
