Enid Blyton Gingerbread Cookies Recipe
Tis’ the season to be jolly and with Christmas just around the corner, we’re trying our hand at gingerbread cookies! Featured quite a few time in Enid Blyton’s Secret Seven, treats like these surely kept the mystery solving team going!

Ingredients
- 3 cups flour
- 2 tsps ground ginger
- 1 tsp ground cinnamon
- 1 tsp baking soda
- 1/4 tsp ground nutmeg
- 1/4 tsp Salt
- 3/4 cup softened butter
- 3/4 cup brown sugar
- 1/2 cup molasses
- 1 egg
- 1 tsp vanilla extract

Instructions
- Take a large bowl and mix together flour, ginger, cinnamon, baking soda, nutmeg and salt.
- In another big bowl, beat the butter and brown sugar with a hand blender till the mixture is light and fluffy.
- To this, add molasses, egg and vanilla.
- Mix this in as well and then little by little beat in the flour mixture.
- Take the dough and turn it into a flat disk and wrap this in a cling film.
- Keep the dough the refrigerator for a minimum 4 hours.
- Preheat the oven to 350°F and meanwhile sprinkle some flour on the work surface and roll out the dough.
- The thickness should be of 1/4 inch.
- Cut out the cookies into gingerbread man shapes using a palette knife or a cookie cutter.
- Place the cookies on a baking sheets and bake them for about 8 to 10 minutes.
- Let them be on the sheet for another two minutes for cooling and then cool them completely on wire racks.
- Decorate with the icing of your choice or have them the way it is.
