- 3/4 cup butter
- 1/2 cup white sugar
- 1/2 tsp vanilla extract
- 1 pinch Salt
- 1 3/4 cups all purpose flour
Lemon Filling
- 1 1/2 cups sugar
- 3 eggs
- 1 tbsp lemon zest
- 1/2 cup fresh lemon juice
- 1/2 cup all purpose flour
- 1 tsp confectioners' sugar

Instructions
- Mix together the butter, sugar, vanilla extract and the salt in a mixing bowl.
- Using a paddle attachment mix the ingredients till it forms a smooth dough and then press it into a tart pan.
- Refrigerate the crust for half an hour.
- Once chilled, bake the crust for about 20 minutes or till it develops a light golden colour.
- To make the filling whisk together sugar, eggs, lemon zest, lemon juice and the flour in a bowl till your get a smooth mixture.
- Pour this filling into the crust and cover the edges of the crust with a foil.
- Now once again put the tart in the oven for another 20 minutes and once done, cool it down and garnish by dusting confectioners' sugar.
