Golden Gazpacho Recipe
This Gazpacho recipe is the perfect way to cool down on those summery nights. Although usually soups are meant to warm you up, there comes a time during a hot summer day that we have the urge to cool down with something more than un-healthy sodas and juices. Gazpacho is the most healthier means to deal with the struggle of those heat filled days.

Ingredients
- 500 grams tomatoes
- 1 yellow bell pepper
- 1 yellow squash
- 2 Shallots
- 1 cup of carrot juice
- 2 tbsp of sherry wine vinegar
- 3/4 tsp Salt
- 1/2 cup of fresh mint leaves
- 1/2 cup of sour cream

Instructions
- Add the tomatoes, bell pepper, squash, shallots, carrot juice, vinegar and salt to blender
- Puree the mixture until it forms a smooth consistency
- Refrigerate the mixture until chilled
- Boil water in a small sauce pan and add the mint leaves and cook for 10 seconds
- Remove the mint leaves from the water and rinse under cold water
- Finely chop the mint leaves and add to sour cream. Mix well
- In a chilled bowl, add the soup and top it off with the minted sour cream
- Serve cold
