Gosht Dopiaza Recipe
Dopiaza literally means two times the onions. An extremely popular Mughlai recipe, onions are used in large quantities to prepare the dish.

Ingredients
- 1/2 kg Mutton
- 3 tbsp of coriander seeds
- 2 tbsp of Cumin seeds
- 3 onions finely chopped
- 3 tbsp of Oil
- 2 tbsp of garam masala
- 1/2 tbsp of Turmeric powder
- 2 tbsp of garlic paste
- 2 tbsp of Ginger paste
- 2 tomatoes finely chopped

Instructions
- Heat a pan and toast the coriander and cumin seeds till aromatic. Grind these into a coarse powder and keep it aside.
- Take 2/3 of the chopped onions and saute it till it turns golden. To this add the meat and fry it till it turns light brown
- Add all the spices, ginger and garlic paste, tomatoes and fry till the oil starts seperating from the mixture. Add sufficient amount of salt.
- Add the remaining onions and mix it well. Saute this batch of onions for five minutes till it turns translucent.
- Add 1 ½ cups of water and bring to boil. Allow it cook till the meat is tender.
- Serve hot with rice or roti.
