Dussehra Special: Gulab Phirni Recipe
A rose flavoured delicious rice pudding, the addition of saffron enhances its taste.

- 1/4 cup of Rice
- 1 litre of Milk
- a few saffron strands
- 1/4 cup of sugar
- 2 tbsp of dried rose petals
- pistachio and almonds for garnishing

Instructions
- Soak the rice in water for half an hour.
- Grind the rice into a grainy consistency. It should feel gritty between your fingers.
- Boil the milk, and add the rice and saffron when its done boiling. Keep stirring to avoid lumps.
- After the mixture starts to thicken, allow it to simmer for 15-20 minutes till it thickens well and rice is cooked.
- Add the sugar and mix till it dissolves. Turn off the heat and allow to cool. Use a hand blender and beat it well to avoid lumps.
- Stir in the rose petals and transfer the Gulab Phirni into serving bowls. Garnish it with chopped pistachios and almonds.
- Cool the Gulab Phirni in the refrigerator for at least 3 hours or overnight. Serve cold.
