Instructions
- Separate the egg white and the yolks.
- In a clean bowl, whip the egg yolk, milk, sugar, and the flour together
- Beat the egg white with a pinch of salt till stiff and peaks are formed
- Gently fold this in the flour mixture.
- Heat a non-stick pan and add a dab of butter and a wee bit of rum.
- Add the batter and swirl the pan, so that the mixture spreads and is about 1/2 inch thick
- Let it cook for a minute or two on medium flame. Add raisins
- With a spatula break the pancake into pieces, gently cook and let it cook for another minute or two till slightly brown
- Plate it, sprinkle with icing sugar, and serve with the apricot or plum jam.
- Tip: This tastes fabulous even with melted chocolate or just chopped fresh fruits
