How To Make Fried Plantains

- 2 cups Water
- 3 cloves of garlic mashed
- 2 tsp Salt
- 1 cups ½vegetable oil
- 2 green plantains

Instructions
- Mix the water, garlic and salt in a glass bowl.
- Peel the plantains and slice length wise.
- In a large pan, heat the oil to approximately 325 degrees.
- Add the plantains to the oil and fry for about a minute per side until they are yellow in colour.
- Remove the plantains from the pan and place the, on a sheet of parchment paper to dry.
- Press the plantain down using a wooden spoon until it is half of the size it was before.
- Put the plantains in the bowl with the water, garlic and salt.
- Allow them to soak for a minute and then pat them dry to remove and excess water.
- Reheat the oil to 325 degrees F and then allow the plantains to cook for two to four minutes until the turn golden brown.
- Remove, and place in a dish lined with paper towels.
- Serve
