Manathakkali Vathal Kuzhambu Recipe

Ingredients
- Manathakkali vathal- 2 1/2 tbsp
- Tamarind - small lemon sized ball 25 grams-old tamarind
- Sambar powder - 5 tsp
- Salt + as needed
- For the seasoning
- 3 tbsp of Oil
- 1 tsp Mustard seeds
- 1/4 tsp fenugreek seeds
- 2 tsp Tur dal
- 1 Red chilli
- pinch aof Hing /asafoetida
- Few curry leaves

Instructions
- Soak the tamarind in 2 -2 1/4 cup of hot water for 20 minutes.
- Extract the juice and throw the pulp.
- If using new tamarind, take little extra than ingredient mentioned
- In a pan, add the oil
- Once oil is hot, add mustard seeds.
- When the mustard seeds is done popping, add fenugreek and tur dal.
- When Dal changes color, add hung and red chillies and saute.
- Then add manathakkali vathal and stir for a minute.
- Add salt, sambar powder and curry leaves.
- Saute for a few seconds and add tamarind extract (about 2 cups)
- Stir well and cook until the mixture thickens and oil seperates and forms layer on top. This will take around 20 to 30 minutes
- Serve with rice.
