Disney sure has a way of making food look delicious and while Pooh is tempted by the honey, we can’t stop thinking about the succotash. So here’s the recipe we scooped up.

Ingredients
- 1 red bell pepper
- 1/2 red onion
- 1 1/2 cups corn kernels
- 1 cup shelled edamame
- 1 small avocado peeled and chopped
- 1/2 cup cherry tomatoes cut in half
- 6 sprigs thyme
- 2 tbsp mint
- 2 tbsp fresh lemon juice
- 3 tbsp olive oil
- Salt to taste
- pepper to taste

Instructions
- Take a non-stick skillet and heat the oil.
- Add bell pepper and red onion and cook on medium flames for about three minutes till the vegetables are tender.
- Add corn and edamame then cook till the corn starts caramelising.
- Turn off the heat and add the cherry tomatoes, avocado, thyme and mint.
- Toss all the vegetables with some olive oil, lemon juice, salt & pepper and serve.
