Ingredients
- 1 kg beef cut into bite-sized pieces
- 4 tbsp flour
- 2 tbsp olive oil
- 1 large onion chopped
- 2 cloves garlic chopped
- 2 -3 jalapeno peppers seeded and minced
- 3 cups beef stock
- 2 tbsp tomato paste
- 4 tsp cumin
- 1 tsp chili powder

Instructions
- Preheat oven to 350 degrees F.
- Cover the meat pieces in flour and brown quickly in oil in an ovenproof pot.
- To the beef chunks add onion, garlic, jalapeno, beef stock, tomato paste, cumin and chili powder and bring to a simmer.
- Cover the pot and place in the preheated oven, baking for about 2 to 2½ hours, until meat is extremely tender.
- Serve.
Recipe Notes
Serve it on top of hot steamed rice or as a stuffing in crunchy corn tortillas.
