Ingredients
- 1 tbsp olive oil
- 2 cloves garlic minced
- ½ small jicama (peeled cut into 4” strips, about 2 cups)
- 1 small red bell pepper cut into 4” strips
- 1 medium zucchini cut into 4” strips
- 1 medium yellow summer squash cut into 4” strips
- 1 fresh jalapeño chile (seeded chopped)
- tsp ¼dried oregano leaves
- tsp ¼cumin
- salt to taste

Instructions
- Heat oil in large skillet over medium heat.
- Add garlic and cook whilst stirring for 1 minute.
- Add jicama and bell pepper; cook and stir until crisp-tender, about 2 to 3 minutes.
- Add all the remaining ingredients and mix well. Stirring frequently, cook until vegetables are tender, about 3 to 5 minutes.
