Moru Keerai Recipe

    Ingredients
    
                - 1 bunch of spinach
- ½ cup Grated coconut
- 1 cup yogurt
- 3-4 dried red chillies
- ¼ tsp fenugreek seeds
- Salt to taste
        For tempering    
                - 1 tsp Oil
- ½ tsp Mustard seeds
- 1 dried red chilli

    Instructions
    
                - Wash the spinach thoroughly and chop.
- Boil the spinach in a pot with a cup of water for roughly 3 to 4 minutes.
- Remove the spinach and allow to cool on a plate.
- In a blender, blend the spinach to a paste without adding water.
- Using a frying pan, heat the oil, fenugreek seeds, mustard seeds and chillies.
- Blend this spice mix along with the coconut and yogurt.
- In the pot used to boil the spinach, add the spinach mix as well as the yogurt spice mix with 1/4th cup of water.
- Stir well under low heat until the mixture begins to boil.
