- 1/2 cup black eyed beans
- 3 cups ash gourd cut into cubes
- 4 Green chilies slit
- 3 1/2 cups Water
- 1 cup thick coconut milk
- salt to taste
- Curry Leaves

Instructions
- In a cup and a half of water, pressure cook the beans on a low flame for six to seven whistles.
- Separate the beans and stock and discard the stock.
- In two cups of water, cook the ash gourd, green chilies and salt to taste.
- Cook until the gourd becomes soft.
- Mix in the black eyed beans.
- Pour in the coconut milk and add a few curry leaves.
- Allow the curry to cook on a low flame for five minutes.
- Stir in a teaspoon of coconut oil into the curry and then remove it from the stove.
- Serve!
