Ooty Varkey Recipe
Ooty Varkey or Ooty Varki is a famous snack from – you guessed it – Ooty, a hill station in Tamil Nadu. The deep-fried snack is popular at roadside stalls and teashops across the town. There is also a healthier baked version of the varki that can be found in bakeries, but we’ll do it the local way with these deep-fried balls.
Varki mainly consists of wheat flour and semolina (rava), along with a pinch of baking soda to give it that palatable crusty outside and puffy inside. Drooling yet? Follow this recipe to fry up a batch of Ooty Varkeys at home and enjoy with a piping hot cup of tea.

Ingredients
- cup ½wheat flour
- 1 tbsp Rice flour
- 1 tbsp semolina rava
- 2 tbsp sugar
- pinch abaking soda
- cup ¼Water
- 1 tsp ghee
- pinch Aof salt
- oil for frying

Instructions
- In a mixing bowl add the wheat flour, rava, rice flour, salt, and sugar. Mix well.
- Add the ghee to the mixture and mix well.
- Finally, add water and mix well to make a soft dough.
- Divide the dough into 10 lemon sized balls.
- Heat oil in a heavy bottomed pan or kadai and deep-fry the varkey in batched.
- Remove using a slotted spoon. Drain excess oil on a paper towel.
- Serve with tea.
