Peanut Thai Dressing

Ingredients
- 2 tbsp corn starch
- 1/2 cup cold water
- 1/4 cup low-sodium soy sauce
- 1/2 cup smooth peanut butter
- 1 tbsp white vinegar
- 2 tsp Sesame oil
- 1 cup warm water
- 1/4 cup Peanuts chopped
- 1 tbsp Mint leaves chopped

Instructions
- Add the corn-starch to the cold water and mix.
- Combine the soy sauce, peanut butter, white vinegar, sesame oil and the warm water together and set the mixture over medium heat.
- Allow the mixture to simmer until the sugar dissolves.
- Add the corn-starch mixture gradually, stirring until the sauce thickens.
- Garnish with chopped peanuts and mint leaves.
