Pumpkin and Sweet Potato Thoran Recipe

Ingredients
- 3 cups sweet potato diced
- 2 cups pumpkin diced
- cup ½Scraped coconut
- 2 Green chilies
- tsp ¼Turmeric Powder
- salt to taste
- For Tempering
- 1 tbsp coconut oil
- tsp ½mustard seeds
- 1 tsp urad dal
- Few curry leaves

Instructions
- Heat oil in a wok.
- Add the mustard seeds, once it splutters, add the urad dal and curry leaves. Fry till the dal turns golden brown.
- Now add the diced sweet potato and pumpkin.
- Add turmeric powder and salt to taste.
- Cover and cook until on low flame until the vegetables are done.
- Sprinkle little water if required. Keep stirring once in a while to avoid burning the vegetables.
- Grind coconut and green chillies into a coarse paste without adding any water.
- Add this to the vegetables and mix well.
- Turn off stove.
- Serve.
