Ingredients
- 2 cups Basmati rice
- 3 cups ½vegetable stock
- 1 in pinch Saffron threads soaked2T hot water for 10 minutes
- 1 tsp Salt
- 2 T olive oil
- cup ½diced onions

Instructions
- Wash rice and drain.
- In a large pot, heat oil over medium heat and add onions once the oil gets hot, frying for 3 minutes.
- Add the rice, stock, saffron and the soaking water, salt, and boil over high heat.
- Once the mix starts to boil, switch to low heat and cookl for 20 minutes.
- Tastes best served hot.
