Salli Boti Recipe

This traditional Salli Boti recipe contains succulent pieces of mutton cooked in a fragrant tomato sauce with various spices and masala giving it that perfect blend of flavours.

Ingredients
- 500 grams of chopped onion
- 2 tsp of garam masala
- 1 tsp of Turmeric Powder
- 1 tsp of cumin powder
- 2 deghi mirch
- 1 tsp of bhuna jeera
- 2 garlic pods
- 1 green chilli
- 4 tsp of ginger-garlic paste
- 1 cup of fresh tomato puree
- 1/4 cup of sugar cane vinegar
- 750 grams of mutton cubed
- 12 soaked dry apricots
- salt to taste

Instructions
- Add the deghi mirch, bhuna jeera, garlic and green chilies in a blender and make a paste
- Add the paste, 3 tsp of ginger-garlic paste and salt to the mutton pieces and make sure it coats all around
- Marinate the mutton pieces for 2-3 hours
- Heat up some oil in a frying pan and add the marinated mutton pieces
- Fry the mutton pieces until its throughly cooked
- Add some oil to another frying pan and drop in the chopped onions
- Cook the onion until they are softened and add the masalas, ginger-garlic paste, tomato puree and salt
- Add some water, cover the pan and let the mixture cook
- Add the apricots and vinegar and the reduce the mixture
- Stir in the mutton pieces and cook for 2-3 minutes
- Remove from heat and serve hot with rice
