Sambar Powder Recipe
Sāmbhar powder (podi) or masala is a coarse mix made of roasted lentils, dried whole red chilies, fenugreek seeds, coriander seeds, asafetida, curry leaves with regional variants including cumin, black pepper, grated coconut, cinnamon, and various other spices. Use the following recipe to make yourself the most delectable Sāmbhar powder ever.

Ingredients
- 1 cup coriander seeds
- 2 strings curry leaves
- cup ¼Chana Dal
- 1 tsp fenugreek seeds
- 1 tsp Mustard seeds
- 2 tbsp Cumin seeds
- 2 tbsp black peppercorns
- 3-4 sticks of cinnamon
- 1 cup Dried Red Chilies
- 4 tbsp Grated coconut
- 1 tsp Turmeric powder

Instructions
- Roast separately coriander seeds and curry leaves; chana dal; mustard seeds and fenugreek seeds; cumin seeds, black peppercorns and cinnamon; dried red chilies; and grated coconut in individual batches.
- Let the roasted ingredients cool to room temperature for 7-8 minutes and transfer to a grinder.
- Add the turmeric powder and grind the spices into a coarse mixture.
- This powder can be stored in an airtight container for up to 45 days.
