Scrumptious Thai Coconut Red Curry

Ingredients
- 2 tbsp red curry paste
- 1 can coconut milk
- 1/4 cup basil
- 1/4 cup bamboo shoot
- 3 tsp fish sauce
- 2 tbsp brown sugar
- 1/3 cup chicken stock
- 1/2 cup mushrooms chopped
- 1/2 red bell pepper chopped
- 1/2 green pepper chopped
- 1/2 yellow pepper chopped
- 1/2 onion chopped
- 2 chicken breasts

Instructions
- Mix the curry paste into the coconut milk.
- Set the mixture on a stove and allow it to simmer.
- After five minutes, add the basil, bamboo shoots, fish sauce, brown sugar, chicken stock and mushrooms.
- Stir well and allow the curry to simmer for ten minutes.
- In a separate wok, sauté the bell peppers and onion in a little oil.
- Fry the chicken breasts in a little oil until fully cooked.
- Put the fried chicken and peppers in a bowl and pour the red curry over it.
- Serve!
