Shrimp Scampi Linguini Recipe
Shrimp scampi is one those dishes that needs no introduction. An Italian favourite, it is the ultimate comfort food with simple ingredients and simple techniques. This shrimp scampi recipe puts across the essence of the dish with a minor twist. The succulent shrimps are cooked in a mouth-watering butter and garlic sauce topped with some cheese giving the linguini or any pasta the ultimate flavour boost.

Ingredients
- 500 grams of linguini pasta
- 4 tbsp of butter
- 4 tbsp of extra virgin olive oil
- 2 Shallots finely diced
- 2 cloves of garlic minced
- 1 pinch of red pepper flakes
- 500 grams of shrimp peeled and deveined
- Kosher salt and ground black pepper
- 1/2 cup of dry white wine
- Juice of 1 lemon
- 1/4 cup of finely chopped parsley leaves

Instructions
Cooking the pasta
- In a large pot, boil water and when it comes to boil add in a pinch of salt and linguini
- Stir it a bit and cover, while cooking for 6-8 minutes
- Drain the pasta and top it with some olive oil. Set aside
For the sauce
- In a large frying pan, heat up 2 tbsp of butter and 2 tbsp of olive oil on medium-heat
- Add the shallots, garlic, red pepper flakes and cook until the shallots becomes translucent
- Sprinkle some salt and pepper on top of the shrimp and add the seasoned shrimp to the pan
- Cook the shrimp until they turn pink in colour, for 2-3 minutes
- When cooked, remove the shrimp from the pan and set aside
- Add wine juice and lemon juice to the same pan and bring to a boil
- Add 2 tbsp of butter and 2 tbsp of olive oil and when the butter is melted, add the shrimp, cooked pasta, parsley and stir well
- Drizzle over a bit of olive oil and serve
