Shrimp Scampi Pasta Recipe

Ingredients
- 1 tablespoon flat leaf parsley chopped
- 8 slices thick-cut bacon
- 8 oz angel hair pasta
- 1 pound fresh shrimp peeled, de-veined, tails removed
- 2 tablespoons blackening seasoning
- 1 cup petite diced tomatoes drained
- 3/4 cup low sodium chicken broth
- 2-3 cloves minced garlic
- 1/2 tsp crushed red pepper
- 1/2 cup scampi sauce
- 1 tablespoon fresh lemon juice

Instructions
- Cook pasta according to package directions. Drain.
- Chop parsley.
- Cut bacon into bite-size pieces.
- Cook bacon in a large, 12-inch skillet over medium to medium-high heat, stirring occasionally, until almost done, about 7-10 minutes.
- Drain off excess fat.
- Evenly coat shrimp with blackening seasonings and add to bacon.
- Cook one minute.
- Stir in tomatoes, broth, garlic, and pepper flakes.
- Cook for 2-3 minutes, or just until shrimp turn opaque.
- Stir in scampi sauce and lemon juice.
- Gently stir in drained pasta. Top with parsley and serve.
