Thai Chicken Bites Recipe

Ingredients
- 2 tsp of brown sugar
- 1 tsp of ground coriander
- 1 tsp of ground ginger
- 1 tsp of turmeric
- 1 tsp of Salt
- 1 tsp of garlic powder
- 1 tsp of chili powder
- 1/2 cup of Thai peanut sauce
- 1/2 cup of coconut milk
- 1/2 cup of chicken broth
- 4 boneless Chicken Breasts
- 2 tbsp of vegetable oil
- 2 tbsp of chopped peanuts
- 2 tbsp of thinly sliced scallions

Instructions
- Mix the sugar and the dry ingredients in a bowl
- In a separate bowl, add the peanut sauce, coconut milk and broth and mix well
- Cut the chicken breast into diagonal strips
- Add the chicken pieces to a bowl along with oil and coat well
- Sprinkle the dry seasoning mix on the chicken strips
- Heat a non-stick pan over medium and add the chicken pieces
- Cook until they are golden crown
- Remove from heat and set aside
- Add the peanut mixture to the same pan and cook until it reduces
- Serve the chicken strips with the peanut sauce in a separate serving cup.
