Thai Red Rice Pudding

Ingredients
- 1/2 cup red rice Thai
- 1/2 cup long grain white rice
- 3/4 cup brown sugar
- 1/4 tsp Salt
- 3 tbsp rose water
- 1/4 tsp ground cardamom
- 3 cups Water
- 3 cups Milk
- 1 can coconut milk
- 1/2 cup half and half
- 1 tbsp lemon zest
- 2 tbsp pistachio nuts ground

Instructions
- Mix the rices, sugar, salt, water and milk together and place the mixture over a stove.
- Allow the mix to begin to boil and then lower the flame so it is simmering.
- Let it simmer until half the liquid evaporates (30-40 minutes), stirring occasionally.
- Pour in the rose water, the coconut milk and the ground cardamom.
- Stir well and then allow the mixture to continue simmering.
- Allow it to simmer for another half an hour and then stir in the lemon zest and the half and half.
- Keep the mixture on simmer and stir until it becomes creamy.
- Take the pudding of the stove and pour it into a serving bowl.
- Eat up!
