- Cooking oil spray
- 1 cup leeks thinly sliced
- 1 tsp bottled garlic minced
- 1 pound lean ground sirloin beef
- 1 tsp red curry paste
- 1 cup Tomato sauce
- 1/2 cup light coconut milk
- 1 tbsp brown sugar
- 1/4 tsp lime rind grated
- 1 1/2 tbsp lime juice
- 1 tbsp Asian fish sauce
- Cilantro Chopped
- green onions Chopped

Instructions
- Spray a skillet with cooking oil and sauté the leek for five minutes.
- Add the garlic and fry for another minute.
- Add the beef and sauté for seven to eight minutes until it browns.
- Mix in the curry paste and tomato sauce and allow the curry to boil until it reduces to half.
- Pour in the coconut milk, brown sugar, lime rind and Asian fish sauce and stir well.
- Cook for two minutes, and remove from the stove.
- Garnish with cilantro and green onions.
