The Walking Dead Hershel’s Spaghetti With Meatballs Recipe
In the ‘Internment’ episode of The Walking Dead, Hershel declares that they should have Spaghetti Tuesday, much to the amusement of viewers and bemusement of his co-prisoners.

His statement is somewhat bizarre; spaghetti Tuesdays on a Wednesday? And yes, they’d naturally need spaghetti to be able to cook it…
Weirdness aside, in the spirit of Halloween (when all the ghouls and zombies come out to play) we thought we’d share an interpretation of the dinner Herschel might have made.
Serve this as a main at your Halloween dinner tonight; it’s guaranteed to delight your guests!

Ingredients
- 2 tbsp extra virgin olive oil
- 1/2 chopped sweet yellow onion chopped
- 3 cloves garlic chopped
- 1 cup carrots finely chopped
- 1 cup brown mushrooms chopped
- 50 oz Italian plum tomatoes
- 1/4 cup chopped fresh basil
- 3 tbsp tomato paste concentrate
- 1/4 cup Parmesan grated
- 1 tsp Salt
- 1/4 cup red wine
For the meatballs
- 1 pound ground beef*
- 1/2 pound Italian style pork sausage
- 2 tbsp basil finely chopped
- 2 tbsp Italian parsley chopped
- 1/2 cup brown mushrooms finely chopped
- 2 eggs
- 3/4 cup breadcrumbs
- 1/4 Parmesan grated
- 2 tsp Sea Salt
- 2 tsp fresh ground black pepper
- 1 tbsp olive oil
- red wine

- 1 1/2 pounds spaghetti

Instructions
To make the sauce
- Sauté the onions and garlic in the olive oil for 1-2 minutes.
- Add the carrots and mushrooms and sauté for 2 minutes.
- Add the tomatoes, basil and parsley.
- Mash the tomatoes until the sauce starts to thicken.
- Add the tomato paste concentrate and reduce heat to simmer.
- Allow to simmer, stirring occasionally.
To make the meatballs
- Mix together the beef, Italian sausage, basil, parsley, mushrooms, eggs, breadcrumbs, cheese, herbed salt and pepper.
- Form 1 inch round meat balls.
- Heat the olive oil and sauté the meat balls on each side for 2-3 minutes.
- As the meat balls are browning add a little red wine.
- Then, add the wine, cheese, salt and meatballs to the sauce.
- Simmer for 45 minutes stirring occasionally.
- While the sauce is simmering cook the spaghetti according to directions.
- Drain the spaghetti and place on a plate.
- Pour the sauce over the spaghetti
- Sprinkle with a little Parmesan cheese and serve.
