ZNMD Spanish Paella Recipe
The Bollywood movie that evoked the wanderlust in our hearts was Zindagi Na Milegi Dobara and there’s a scene after the dive where Arjun is making paella. What better way to celebrate life than cooking, that too in Spain. Let’s explore this exotic dish.

Ingredients
- 2 tbsp olive oil
- 1 tbsp paprika
- 2 tsp dried oregano
- Salt to taste
- pepper to taste
- 2 pounds boneless Chicken Breasts 2-inch pieces
- 2 tbsp olive oil separated in two portions
- 3 cloves crushed garlic
- 1 tsp crushed red pepper flakes
- 2 cups uncooked white rice
- 1 pinch saffron threads
- 1 Bay Leaf
- 1/2 bunch chopped parsley
- 1 quart chicken stock
- 2 lemon zest
- 2 tbsp olive oil
- 1 chopped onion
- 1 chopped red bell pepper
- 1 pound chorizo sausage
- 1 pound shrimp peeled and deveined

Instructions
- Take 2 tbsp olive oil in a mixing bowl and stir in paprika, oregano, and salt and pepper.
- Add chicken pieces and toss to coat.
- Cover this with a cling film and refrigerate.
- Heat 2 tbsp olive oil in a large pan and add garlic, red pepper flakes, and rice.
- Stir to coat the rice with the oil and cook for about 3 minutes on medium heat.
- Add saffron, bay leaf, parsley, chicken stock, lemon zest and stir.
- Bring the mixture to a boil, reduce the heat and cover the pan.
- Simmer the paella for about 20 minutes.
- In a separate pan heat 2 tbsp of olive oil.
- Cook the chicken and onion over medium heat for 5 minutes.
- Add bell pepper and sausage and again and continue cooking for 5 minutes.
- Add the shrimp and keep turning them till both sides are pink in colour.
- Once the rice mixture is ready, spread over the serving plate and top it with sea food.
