The Chef Speaks

“Not many people today in Bombay are aware of the different catholic communities and moreover that they are very different from each other yet very similar,” says Chef Gracian de Souza, the man behind this extravagant menu at Bombay Vintage. “The Bombay Vintage team and I wanted to collaborate on this idea to talk about the different catholic communities in Bombay, their lifestyles and the way they cook and eat. The Catholic Festival menu at Bombay Vintage is an amalgamation of these different Bombay catholic communities and features Goan, Mangalorean, East Indian & the Anglo Indian dishes which are curated retaining the traditional aspect with a modern interpretation of the cuisine using European cooking techniques and presentation,” he adds.
