St Patrick’s Day Irish Stew Recipe

Tomorrow, thousands of people across the world (but especially the Irish) will celebrate St Patrick’s Day, a day which marks the death of St Patrick and is an official Christian feast day.

St Patrick’s Day Traditions

Aside from the well-known tradition of pinching someone if they’re not wearing green on the day, and being on a lookout for leprechauns, the day also allows a lift on Lent fasting. Therefore, just for the day, Christians can enjoy non-vegetarian food, alcohol and any other foods they may have given up during Lent.

Irish Stew

To take advantage of the fact that Christians can enjoy meat on St Patrick’s Day, we thought we’d share  a traditional Irish stew recipe.

Irish stew is traditionally made with lamb or goat neck meat and root vegetables as well as onions, carrots and parsley. True to tradition, this stew is made with lamb neck meat, potatoes and a variety of vegetables. It’s lightly seasoned with herbs and salt and pepper. Serve the stew as a part of your St Patrick’s Day lunch with rice.

Instructions
  1. Add all the ingredients for the stock to 3 litres of water.
  2. Bring this mixture to a boil and then simmer for two hours.
  3. Strain the stock and continue boiling until it is half of its original quantity.
  4. Boil the lamb in the stock for ten minutes, skimming off any froth on the surface.
  5. Stir in the potatoes, carrots and onions and season with salt and pepper.
  6. Simmer the stew for ten minutes.
  7. Stir in the thyme and continue simmering for 15-20 minutes until the lamb is cooked.
  8. Take off the heat and cover for 15 minutes.
  9. Serve and enjoy!
