The Avengers’ Shawarma Recipe
A shawarma is a Mediterranean –Levantine Arab to be exact – dish made with meat that is slow roasted on a rotating skewer as long as 24 hours. The meat or a mixture of meats is served with a long list of accompaniments often as a wrap or roll. The traditional Mediterranean sides include hummus, tahini, pickled turnip and vfreshly sliced vegetables on a pita bread.

- 500 g meat (beef/pork mix chicken or turkey)
- 1 tbsp vegetable oil
- 2 tsp tumeric
- 1 tsp Cardamom
- 1 tsp cumin
- tsp ½coriander
- tsp ½cinnamon

Instructions
For the Meat
- In a small bowl, mix together the spices until fully combined.
- Remove meat from bones.
- Use a meat tenderizer or heavy pestle to pound the meat to half its original thickness.
- In a shallow baking dish, toss meat with vegetable oil and 3 teaspoon of the spice mix until fully coated. Allow to marinate for 30-60 minutes.
- Brush a grill pan with cooking oil, then heat over medium-high heat.
- Grill strips of meat, about 3 minutes on each side, or until cooked through.
Assembling the shawarma
- Mix the Greek yogurt, cucumber, dill, garlic and shawarma seasoning in a small bowl. Cover and place in the refrigerator until time to serve.
- Start with a warm pita and spread 2 tablespoons of the yogurt sauce and 2 tablespoons of hummus in the middle.
- Layer with lamb, then top with onion, tomato and lettuce, if you wish.
- Fold and serve.
