The Princess and the Frog Tiana’s Gumbo Recipe
Continuing with our trend of sharing iconic recipes from and inspired by Disney films, we’re drawing focus to The Princess and the Frog, which is about Tiana, a waitress who turns into a frog after kissing a bewitched prince.
Tiana as a Waitress
In the movie, Tiana is a diner waitress working two jobs so that she can earn enough money to start a restaurant. She meets Prince Naveen at a ball that was giving her enough money to finally buy an old mill that she could convert into a restaurant, kisses him and transforms into a frog.
Tiana’s Gumbo
As a little girl, Tiana and her father cook a big pot of gumbo – a Louisiana dish that is made with stock, meats, celery, bell peppers and onions. After she adds the final ingredient – a dash of Tabasco sauce, her father pronounces Tiana’s gumbo to be “the best he’s ever tasted”.

We have to admit that the gumbo does look pretty tempting, doesn’t it? So, we’ve put together a recipe for gumbo inspired by The Princess of the Frog. Enjoy it with some rice or bread for lunch or dinner.

- 3 large boneless skinless chicken breast halves
- salt and pepper
- 1/4 cup vegetable oil
- 1 pound smoked sausages cut into pieces
- 1/2 cup all purpose flour
- 5 tbsp margarine
- 1 large onion chopped
- 8 cloves garlic minced
- 1 green bell pepper seeded and chopped
- 3 stalks celery chopped
- 1/4 cup Worcstechire sauce
- 4 cups hot water
- 5 beef bouillon cubes
- 1 can stewed tomatoes with juice
- 2 cups okra chopped
- 4 green onions sliced
- 1/2 pound small shrimps peeled, deveined and cooked
- 2 tbsp Tabasco sauce

- Toss the chicken in salt and pepper and cook it in the oil until browned on both sides.
- Cook the sausage in the same oil until browned.
- Add the flour to the oil and stir in 2 tablespoons of the margarine.
- Continuously stir this mixture over medium high heat until brown.
- Stir in the remaining margarine and add the onions, garlic, green pepper and celery.
- Cook this mixture over a low flame for 10 minutes.
- Stir in the Worcestshire sauce, salt and pepper.
- Stir for 10 minutes and then pour in four cups of hot water.
- Add the bouillon cubes and stir rapidly until they melt.
- Add the chicken and sausages.
- Bring the gumbo to a boil and reduce the heat.
- Cover and simmer for 45 minutes.
- Stir in the tomatoes and okra and cover again and simmer for another hour.
- Take the gumbo off the stove and stir in the green onions, shrimp and Tabasco sauce.
