Vegan Lentil Curry Recipe

Ingredients
- 1 cup lentils cooked and drained
- 1 cup Basmati rice cooked
- 2 cloves of garlic chopped fine
- ½ onion chopped fine
- 1 tablespoon extra virgin olive oil
- 16 ounces Tomato sauce
- cup ⅔coconut milk
- teaspoon ½garlic powder
- teaspoon ½ground ginger
- teaspoon ½turmeric
- 1 teaspoon garam masala
- 2 teaspoons Curry
- Cilantro for garnish

Instructions
- Heat olive oil in a frying pan.
- Add the garlic and the onion and cook until golden brown and fragrant.
- Add the tomato sauce, coconut milk and spices and cook for about 5 minutes. Stir well.
- Add cooked lentils, stir and cook for 15 minutes- over medium heat.
- Serve the lentils over the basmati rice.
- Add cilantro for garnish.
