For those that don’t know, Cinco de Mayo is a Mexican celebration held in the United States to commemorate the triumph of the Mexican army over French forces in 1862. While history buffs revelled in the historical tales behind the festival, we foodies chose to stuff ourselves with the delicious Mexican cuisine that was on offer. Tacos, empanadas, burritos, chorizo and nachos all vanished down our throats in split seconds. If, like us you think you overdid it on the food, then there’s no need to worry. Avocados, the staple ingredients of guacamole contain high levels of vitamin K and vitamin A. Vitamin A helps protect vision and contains antioxidants which prevent cancer and cellular damage. Vitamin K improves the ability to take in calcium, which is good for your bones and is essential for blood clotting. Both vitamins can drastically boost you immune system.

Tomatoes are another staple ingredient in guacamole. They contain Lycopene, which has been found to help prevent prostrate cancer. They also contain large amounts of Vitamin A and C and folic acid, which aids the production of red blood cells.

One cup of guacamole contains approximately 15 grams of fibre. High fibre diets reduce the risk of heart problems, and aid digestion.
